Loaded with nourishment to give you an energy boost, these crackers are a great mid-afternoon snack!
½ punnet (60g) of alfalfa and broccoli sprouts
180g tuna, drained
8 black olives, stoned and quartered
8 cherry tomatoes, halved
sliced feta cheese
crackers, toast, or bruschetta
olive oil, to drizzle
Combine the sprouts, tuna chunks, olives, and tomatoes in a medium bowl. Season with salt and cracked pepper.
Arrange the feta cheese on crackers. Top with sprout mixture and drizzle a little olive oil over each before serving.
